Bacon, let's chew the fat!! I prefer a really intense smoked bacon, and the best I've found was Benton's Smokehouse Bacon.. It's rather pricey, so it leads me to try others.. The Cracker Barrel Bacon is pretty good fill in for half the price.. Anyone else have any favorites??
Few years ago, while down in South Carolina on a fishing boat, we friended another fisherman. He was from Alabama, and shared his preference way to cook bacon.. Cook it on a sheet pan, bout an hour, hour half, at 275-300.. Usually turning as needed. You basicly render the fat but leave it chewy, not crispy as frying it does.. It is good, like bacon jerky..
