Ive smoked chicken and ribs but never venison roasts. I know the stuff can get dry and tough because of its lack of fat. Does anyone have any successful recipes? Particularly ones which help increase fat/moisture?

Could probably only get it done at the processor and not a butcher, but next time I would ask if he can mix up some pork or beef fat into the venison. Probably make some good burgers or meatloaf.The escape is nowhere near complete. The inventor of LIBERAL fishing. (soon to be seen on ESPN 45 because the 44th never worked.)

I marinate it, preferably using stubbs texas butter injectable marinade, give the outside a quick sear in a pan, ideally in a mix of equal parts butter, bacon grease, and marrow, then slow cook it in the oven, raised on a wire rack, in a pan with an inch or so of equal parts stubbs texas butter and water (not high enough to contact the roast) and i tent it in foil with a small vent. Size of the roast/time in the oven, add more stubbs/water as needed.
