Try adding ginger to that...
We do a chicken soup with:
chicken, ginger (4 or 5 finger sizes), 1 onion, 1 tomato, carrots, korean turnips (optional for filler)
then more optional filler stuff, spinach/asian cabbage/green of your choice really thats light flavored, not bitter (greens at the end so they're not overcooked)
dried Asian mushrooms or bay leaves for flavoring if available.
The ginger gives the soup a refreshing kick along with the added "health benefits".
Can substitute the chicken with pork/pork bones/ribs.
